If anything rivals my love of baking it is my love of comic books. More specifically, my love of Marvel comic books. Deadpool has long been one of my favorite Marvel characters to follow. He reminds me of Wolverine with his shady past but generally good heart.
I have to say that some of the Marvel movies, although awesome in their own right, have let me down when it comes to following the comics they are created to represent. Of course, it’s all politics but for me, Civil War just wasn’t the same without my beloved Wolverine in it. After all, he was an important character in the comic.
The Deadpool movies really get it right though. Even if he doesn’t have his alter persona to talk with like in the comics I do think that they got much of Wade Wilson’s personality spot on. They couldn’t have picked anyone better than Ryan Reynolds to portray my favorite Marvel character. Needless to say, I am more than a little excited about the release of Deadpool 2 this week. I’ve been waiting for this one for a while now, and even more so since it was announced that Cable would play such a large (pun only partially intended) role in the film.
Bakery Style Sugar Cookies
These cookies come out so soft and chewy but hold up well for decorating. You can chill the dough for around 1-2 hours before rolling out and cutting for cut out sugar cookies that don’t expand when cooking them. For the cookies shown we chilled the dough for around 45 minutes so that they would expand slightly, but not too much.
For the circle shape, you can use anything from a circle cookie cutter, a biscuit cutter, or even the top of a glass. Anything that you have available to you that has a circular shape will work!
Iced Sugar Cookie Recipe
This is by far one of my favorite cookie recipes. It is such a simple cookie, but it is the perfect snack when you want something sweet to eat. Although they aren’t terribly “healthy” as made there are plenty of ways to make them a little better for you. The egg can be swapped out for a chia egg, you can use a vegan butter alternative, and you can even swap out for a healthier flour if you prefer!
This is the same cookie dough we used during the holiday season for our Grinch Heart Holiday Cookies. It turned out great for that one too, but we chilled it a little longer to ensure the hearts really kept their shape.
1/2 C shortening
1 C unsalted butter, softened
1 tsp vanilla extract
1/2 to 1 tsp almond extract, to taste
1 1/2 C sugar
1/2 C cornstarch
3 C organic flour
2 tsp baking powder
Combine butter and shortening in a stand mixer (or use a hand mixer if you prefer). Add sugar, vanilla, and almond extract. Mix until smooth. Add egg to the mixture and blend until incorporated.
In a separate bowl combine flour, cornstarch, and baking powder.
Slowly pour dry ingredient mixture into butter mixture. Mix until just blended. (Do not overmix!)
Separate dough in half. Wrap each half in plastic wrap and place in the fridge to chill 1-3 hours. (Chill longer if you want your dough to spread less when baking)
Remove dough from fridge and roll out onto a surface that has been lightly dusted with powdered sugar. Cut circles and place on baking sheet lined with parchment paper.
Bake cookies at 325 degrees F for 10 to 12 minutes. Cool in pan for 5 minutes before removing to rack. Cool on rack 10-20 minutes, or until completely cooled before adding frosting.
