Can you ever go wrong with cinnamon/sugar anything?

In my book that answer is a hard no. There is just something about that combination that is perfect for breakfast, snacks, or any other time my sweet tooth is yelling FEED ME. (which is way more often than I would like to admit)

These cinnamon sugar muffin bites are so quick and easy to make and store fairly well for a few days. You can make a batch Sunday night for grab and go school breakfasts, or eat them all yourself while you watch your favorite late night shows. (no judgment here lol)

These cinnamon sugar muffin bites are easy to make healthy, gluten-free, or dairy free depending on your personal dietary needs.

For this recipe, we have used applesauce in place of butter for a healthier option. While some butter is used a vegan option can be used. It is important when using applesauce to choose the natural variety if available. More often than not varieties that are not labeled as natural and unsweetened have an astounding level of sugar and other additives in them.

Cinnamon Sugar Muffin Bites

These quick and easy mini muffins are just right for breakfast, snacks, or any time!


  • 2 T natural applesauce
  • 2 T melted butter
  • 1/3 C sugar + 4 T
  • 1 t ground cinnamon
  • 1 C organic flour
  • 1 t baking powder
  • 1/4 t salt
  • 2/3 C milk
  • 1 egg


  1. Preheat oven to 350 and grease mini muffin pan
  2. Combine egg, 1/3 C sugar, vanilla, and applesauce.
  3. In a separate bowl combine flour, baking powder, and salt.
  4. Slowly add dry mix into egg mix.
  5. Pour mixture into mini muffin pan until each muffin is about 3/4 full.
  6. Bake 12-15 minutes watching for muffins to brown slightly.
  7. Let cool 5 minutes before removing from pan. Once removed from pan brush each muffin with melted butter.
  8. Combine remaining sugar and cinnamon in a small bowl and toss each muffin in mixture to coat.


For a healthier option organic sugar, vegan butter, and rice milk can be used. Gluten Free flours can be used as well!

Cinnamon and sugar mix can be adjusted to personal taste.

Our whole family loves these cinnamon sugar muffin bites and they are usually gone as quickly as I can make them!

With fall on its way in they would make the perfect addition to a cup of hot cider or even cocoa. For slightly more of a cinnamon kick you can also add cinnamon to the muffin mix.
