Pumpkin Spice Cupcakes with Cream Cheese Frosting

I have been meaning to make these cupcakes for so long.

Seriously, like, forever. A friend of mine posted a recipe that gave me the idea for pumpkin spice ( something ) in late September! I’ve been working on this recipe since then, and just finally got around to actually doing it.

What can I say, I’ve got a lot of cupcakes in the works around here. Having adult ADHD can contribute to this. You know when you have 80 tabs open and forget what you were doing now and then? Yeah, that’s pretty much my head all day every day.

I really wanted to make something that wasn’t overly Halloweenie but still had a fall vibe so yup, it’s topped with a pumpkin. I know, I know….not everyone likes those pumpkins ( because some people are wrong lol ). This could easily be anything on top. I, for one, am a HUGE fan of those pumpkins, though. I will use any excuse to keep Halloween candy, like candy corn, still on the dessert menu.

I think this is about it for fall recipes from us, though. Although I’m much more of a Halloween fan I have to say that I am READY for some Christmas baking. There is just something so cozy about warm baked goods on chilly days.

We recently finished reading Charlotte’s Web so we have Wilbur cupcakes on the books as well as a spider cake in honor of Charlotte.

Pumpkin Spice Cupcakes with Cream Cheese Frosting

I know…. ON WITH THE CUPCAKES! I get excited over baked goods too, it’s ok.

I love a sweet cupcake but these guys are seriously delicious. The perfect spice blend in the cake goes absolutely beautifully with the sweetness of the cream cheese frosting. It’s like a really good carrot cake. I used to hate carrot cake when I was younger but nowadays I absolutely love it. ( Isn’t it weird how our tastes change? I wonder if there is a science behind it…)

Pumpkin Spice Cupcakes with Cream Cheese Frosting

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 18 cupcakes

1 cupcake

Pumpkin Spice Cupcakes with Cream Cheese Frosting

Ingredients

    The Cake:
  • 1 1/2 C flour
  • 1 t baking powder
  • 1 t cinnamon
  • 1/4 t ginger
  • 1/4 t nutmeg
  • 1/2 t salt
  • 1 C pumpkin
  • 1/2 C oil
  • 1/2 C brown sugar
  • 1/4 C pure cane sugar
  • 2 eggs
  • 1 T vanilla
  • For the Frosting:
  • 8 oz cream cheese
  • 1/2 C unsalted butter
  • 2 C powdered sugar
  • 1 t vanilla

Instructions

  1. Combine oil, pumpkin, sugars, eggs, and vanilla in stand mixer bowl or large bowl. Blend 1-2 minutes or until thoroughly combined.
  2. In a separate bowl, combine sifted flour, cinnamon, ginger, nutmeg,and salt.
  3. Slowly add dry mixture into mixer bowl with sugar mixture. Continue blending about 2 minutes or until combined but not overmixed. ( This will make your cupcakes too dense.)
  4. Spoon into baking cups until about 2/3 full.
  5. Bake in 350 degree oven for about 15-20 minutes. Oven times will vary so be sure to check at earliest time and gauge from there.
