So, I have a confession to make you guys. I am a muffinahollic. It could be blueberry, chocolate, cinnamon, or so many others. I have never met a muffin that I didn’t like.
Ok, no that is kind of a lie. I don’t think I would like a banana muffin. I haven’t tried yet though because I just cannot get myself to like banana anything. You know you guys have some flavor that you just can’t get yourself to like!
Bananas are my kryptonite. I know they are good for me. I should be eating them, especially with an autoimmune disorder. In fact, they would be GREAT for me. I just can’t hang with banana flavor.
We aren’t here to talk about bananas today, though. (thank goodness!) We are here to talk about muffins! More specifically blueberry muffins!
Blueberries have so many health benefits. They make such a great snack. Not only are blueberries a great antioxidant, but they are a fantastic source of fiber, folate, and Vitamin C. They are a source of calcium and magnesium as well which means that increasing your intake of blueberries will help to maintain healthy bones. (This recipe has 32.9% percent daily value of Vitamin C!)
I am a huge fan of what I like to call Mug – O – Muffins. They offer a one serving size “batch” of muffins for you to indulge yourself without wearing yourself out in the kitchen.
Before I started having more serious health problems limiting things for me I loved baking and spent a lot of my time making things. Nowadays, I just can’t handle all that time in a hot kitchen.
Luckily, with the Mug – O – Muffin option you get all of the great taste and fun of making a muffin without all of the exertion. It’s a good way of modifying to still be able to enjoy what you used to in a way that works for you.
I’m not even going to lie, I was very selfish and downright rude about accepting my limitations when my disease began to get the better of me. It just wasn’t fair. I couldn’t deal with it. It had stolen from me the joy I had from being a firefighter, an EMT, a nursing student, a baker, an active mother, and so much more.
The more I looked at it, however, I was actually lucky. I was lucky I had the chance to do those things while I was still healthy. Some people never have that chance.
I quickly made my mind up to stop feeling sorry for myself and find ways to make this work for me rather than letting it take over my life. Sure, I still have days where I feel absolutely miserable but I always try to remind myself of what I have rather than what I don’t.
This blueberry muffin recipe is a great way of working within my limits to still enjoy what I love in a way that I can. I go through a lot of these. ( a major weakness of mine is baked goods of any variety ) I have a feeling that once you try them you’ll be adding them to your favorites list too though simply because they are so easy and so delicious.
